I don't quite understand what kind of functionality you're looking for with respect to signature fields for in catalog items. Could you explain your idea in a bit more detail and maybe provide an example of what you would like to see on the invoice/proposal in the end?

Also, could you please create a separate post for adding links to offers? If a post is for more than one feature, it makes it tricky for users to vote on.
